These split peas are no ordinary split peas. In Farsi, they're referred to as lapeh dir paz, or "slow-cooked split peas." These split peas take much longer to soften, and therefore keep their shape during a cooking process that takes hours
We're going to let you in on a little secret. Our version of gheymeh isn't technically gheymeh, as the word translates to "minced meat." Like our Bean Baaz, we used diced mushrooms as an equally delicious substitute
